High quality dark chocolate usually contains 60% - 70% chocolate solids, with milk chocolate over 30%. Many poor quality chocolates contain less than 10% chocolate solids.

High quality chocolate is made with cocoa butter. Cocoa butter, though a saturated fat, has been shown to have a neutral effect on cholesterol levels. (Hydrogenated vegetable oils, which do raise cholesterol levels, are found in poor quality chocolate.)
